
I kind of like to cook Loofah Soup for dinner. Loofah is such a nice vegetables and little boy likes it a lot when I cook Loofah Soup with egg and pork. Alternatively you can add in some tanghoon into the soup. This vegetable has a bit of sweet taste after you cooked it. I like to cut the loofah into big chunks but with the kids eating it I’ve got no choice but to cut it into small little pieces.

Loofah or Chit Kua ( in Cantonese )
Ingredients :
2 loofah, remove the skin and cut into small pieces
1 piece of lean pork, cut into thin slices
1 tsp cornflour
A dash of sesame oil
Some chopped garlic
Salt and pepper to taste
1 tsp chicken stocks
2 eggs, beaten
4 bowls of water
Method :
1. Marinate pork with cornflour, sesame oil and some salt.
2. Heat oil in pan and sautee garlic till fragrant.
3. Add in pork and loofah. Stir fried for a minute.
4. Add in water and let it boil for about 15 minutes.
5. Season with salt and chicken stocks.
6. Turn off the fire and pour in the beaten eat. Dish up and serve with rice.
