Lotus Root Soup

Being a Hokkien, my Ah Mah seldom boil soup for us when we are small. Maybe because it is not our culture to drink soup during dinner. But my Mom is a Cantonese and soup is a must for dinner every night. Well, for me I can only boil 3 types of soup at home cos Dearie Suki favourites is only Lotus Root Soup, Herbal Chicken Soup or ABC Soup. At times I really wanted to explore Mom’s recipe but then if I boil a big pot end up I am the only one drinking it. So better not and to be safe stick back to the 3 types of boring soup every week.

Ingredients :
500gm Pork Ribs
1 stick Lotus Root
1 cup raw peanuts
A handful of red dates
1 dried cuttlefish ( tiu peen )
5 bowls of water

Method :
1. Cleaned the pork ribs and blanched with hot boiling water.
2. Cut lotus root into semi thin pieces
3. Put everything in a slow cooker and let it slow boil for about 8 hours.
4. Season with salt when its ready.
