Steamed Brinjals With Crispy Prawn Chilli

This is something that is pretty easy to prepare when you are eating alone at home. Kids had porridge yesterday afternoon, Dearie Suki is out for an appointment and me, all alone don’t know what to eat for lunch. Ended up I settled myself with some steamed brinjals and added with a few teaspoon of ready mix Crispy Prawn Chilli from the brand TEAN’S Gourmet. Hmmm… taste wise not too bad. It is also good to eat our Pan Mee with this chilli. Sure syiok!

Cheesy Chicken Quesadilla

Yippie! TGIF… but too bad tomorrow , Saturday, I need to get into the office to witness a write off of one my product together with the MOH officer and my principal. Haizzz… can’t they just give me a break and can’t they do the write off on weekdays instead of weekend? Since I am busy with meeting today,  I hope the warehouse manager will get ready the auto lifts in the warehouse for tomorrow exercise.

I made this Cheesy Chicken Quesadilla last weekend for lunch. Dearie Suki had this for lunch too but I knew it he don’t really like to have this kind of food. But after a few grumbling from me, I think he got no choice but to eat it minus the orange salad on the plate. Hahaha

To prepare this it is pretty simple. Just purchase one packet of Old El Paso Soft Taco Dinner Kit from the supermarket shelf and you will have scrumptios Mexican meal. All ingredients are available inside the Dinner Kit and you just need to add in any meat of your choice and one big onion. Wrapped the chicken filling on a piece of tortilla and then topped with mozarella cheese. Then I grilled it over the electronic grilling machine till the cheese melted and add a few dashes of Tabasco on it. Wow…. yummilicious meal. The kids even love it so much when I prepared for them in their bento last weekend.

Remember go and grab one packet of Old El Paso Soft Taco Dinner Kit or Old El Paso Fajita Dinner Kit at less than RM18.00 per pack to have an enjoyable Mexican meal at home today.

Fried Chicken Drumstick

Oh gosh, my freezer really filled up with so many things. I am still clearing it part by part and another week to go its Chinese New Year and the freezer needs to stock up with food again. Both Ee-Thern and Le-Ann wanted friend chicken drumstick for dinner. I think they wanted to eat the tomato kethcup more than the fried chicken.

The Window Blinds that Dearie Suki wanted to fix it at the wet kitchen, has not been done yet. I am so pissed off with him and I can’t do any frying outside the wet kitchen because it is raining. Hence it is a double job for me to fry inside the dry kitchen and later on I have to wipe the wall and mop the floor.

The fried crispy chicken drumsticks is marinated using McCormick Season ‘N’ Fry Chicken Coating. There are few flavours to choose from and personally I quite like to buy this brand. Pricing wise it is not too expensive, RM2.20 per packet and it is available at all the leading hypermarkets and supermarkets. What I did was, coat the chicken drumsticks with the seasoning and let it stand for a minute. Then deep fry in hot oil till golden brown. The kids is really enjoying their Mommy’s version of KFC. Hahaha

Banana Cupcakes

I  have been experimenting with the Pillsbury Cake Mixes recently. Oh I could say I baked every different SKUs on Saturday. After baking I allocated out to my neighbours and Ah Mah’s house cos I don’t really like cakes.

Last Saturady I tried the Pillsbury Yellow Cake and added in some bananas to make Banana Cupcake for the kids.  The end result is not too bad but I still think it is a bit sweet. Even Dearie Suki also complaint to me it is too sweet. Well reason could be :

Pillsbury Yellow Cake Mix ( Sweet ) + Banana ( Sweet ) = Super Sweet

The instruction at the back of the box required 3 eggs, 1/3 cups oil  and 1 1/3 cups water. So I tweak the recipe a bit and the result of the cake is good. Moist, soft and fluffy but damn sweet.

What I do is :
1 box Pillsbury Yellow Cake Mix
1 1/3 cups milk
1/3 butter, melted
3 eggs
1 1/2 cups banana, mashed

Mix everything and beat at high speed for about 3 minutes. Then scoop batter into the cup and bake at 180 DC for about 15 - 20 minutes. I think the next round I bake again I will add 2 tbsp of flour so that it won’t be that sweet. But both Le-Ann and Ee-Thern love it and can wacked 3 cupcakes at one go.
